The reach-in refrigerator — the workhorse
The upright reach-in is the unit most kitchens build around. One, two, or three doors; adjustable shelves; the everyday home for everything in active rotation. Its strength is balance — accessible, reasonably high-capacity, flexible enough for nearly any station.
Where reach-ins get operators in trouble is door count and traffic. A solid (non-glass) door holds temperature far better than glass, but every opening dumps cold air. On a busy line, a three-door reach-in opened constantly works much harder than the spec sheet implies, and in a hot kitchen that workload compounds.
